How to make Ulu Hye's

Vegan Tigernut Flour Brownies

The brownie obsession is real. And, now that we’ve discovered tigernut flour (yes, we are a little late to the game), our brownies have hit bonus level of deliciousness.

For anyone that doesn’t know much about tigernut flour, it is a GREAT alternative to regular flour. It’s grain and gluten free making it paleo friendly. Yay!

Tigernut flour is rich in dietary fibre making it great for healthy bowels. It’s also rich in vitamin E which means it has antioxidant properties.

You can use tigernut flour in place of regular flour with a 1:1 ratio. The texture tigernut flour gives is light with the perfect amount of moisture. It’s our new fave!

We love Power Super Foods tigernut flour. You can find it in your local health food store, or online here.

Ingredients

  • 1/2 C plant based milk (made using Ulu Hye Nut Mylk Base)
  • 1 tbsp ground chia seeds
  • 1/2 C tigernut flour (We used Power Super Foods)
  • 1/2 C cacao powder
  • 2 tbsp peanut butter
  • 1 tbsp arrowroot powder
  • 1 tsp baking powder
  • 1/4 tsp Himalayan salt
  • 1/3 C maple syrup
  • 1/3 C coconut oil melted
  • 1/4 C chocolate chips

Steps

Preheat your oven to 180°C

Combine milk and ground chia seeds in a bowl, stir and set aside

In a medium bowl combine tigernut flour, cacao, arrowroot, baking powder and salt

Add coconut oil, milk and chia, peanut butter and maple syrup and combine well

Stir chocolate chips through

Pour into a lined, square baking dish and bake for 30 minutes. If you want gooey brownies then bake for slightly less time
