Flourless Choc Cranberry Oatmeal Cookies

Here at Ulu Hye HQ, we do our best to make our recipes healthy…These flourless choc cranberry oatmeal cookies fit the bill. That way, we don’t feel so guilty when we eat them ?

We love baking with oats as they give a delicious flavour and texture. Oh, and they’re so high in dietary fibre too!

You might say these cookies are the ultimate bowel friendly snack! If you’re chasing more regular bowel movements, then this combination of chia seeds, banana and oats are just what the doctor ordered!

Ingredients

  • 1.5 tbsp chia seeds
  • ¼ cup nut milk (made using our Nut Mylk Base)
  • 2 ripe bananas
  • ¾ cup rolled oats
  • ¼ cup shredded coconut
  • ¼ cup vegan chocolate chips
  • ¼ cup cranberries
  • 1 tbsp almond butter
  • Cinnamon

Steps

Preheat your oven to 170°C and line a baking tray with a silicone mat or baking paper

In a small bowl, combine milk and chia seeds and set aside for 5 minutes

In a medium bowl, mash bananas with a fork to make a puree

Add all ingredients into banana puree and stir through

Spoon out mixture onto tray - about 1 tbsp worth and flatten slightly

Bake for about 10 minutes

Allow to cool and enjoy. Store in an air tight container for up to 5 days
