Cheesy Vegan Gnocchi

Nothing beats homemade gnocchi and this “cheesy” vegan gnocchi recipe is so easy, anyone can make it! Let’s face it, gnocchi is the ultimate crowd pleasing comfort meal.

Our cheesy vegan gnocchi recipe is light, fluffy and would you guess that the “cheesy” white sauce contains cauliflower?! Got to sneak some veggies in, somehow!

Our cheese sauce has the perfect combination of cauliflower, cashews, our plant based milk and nutritional yeast. It’s light, yet packed with flavour.

Ingredients

For the gnocchi
  • 500g potatoes - boiled until soft
  • 1 1/4 C flour of your choice
  • 1 tsp salt
For the "cheesy" sauce
  • half head of cauliflower - boiled until soft
  • 3/4 C raw cashews - soaked for at least 30 minutes
  • 1 C almond milk (made using our Almond Mylk Base)
  • 3/4 C nutritional yeast
  • 1/2 brown onion chopped finely
  • 1 clove garlic chopped finely
  • 1 tsp dijon mustard
  • juice of 1 freshly squeezed lemon
  • splash of tamari
  • salt and pepper to taste
  • 1 handful vegan cheese

If your potatoes aren't already peeled, go ahead and peel them then mash with a fork or potato masher in a bowl

Add flour and salt and mix with your hands to combine. Add a little more flour if you need to ensure your mixture isn't sticky

Sprinkle some flour onto your bench and transfer your mixture onto the bench. Press mixture into a flat ball and cut into halves. Take one half and roll out into a thick rope, then cut into 2cm pieces

Roll a fork over each pice to create ridges and repeat with the second half of the mixture. Once all complete set aside

Now for the cheesy sauce! Make sure your cauliflower is boiled and soft. Combine all sauce ingredients EXCEPT the vegan cheese into your blender, and blend on high until you have a smooth and creamy texture that is free of any lumps

Place in a saucepan along with the vegan cheese and on a low to medium setting, heat your sauce, stirring occasionally

Fill a large saucepan with water. Add a pinch of salt and bring to the boil

Once boiling, drop the gnocchi in carefully and once they float to the top, remove and set aside

Option to pan-fry them in a little olive oil or vegan butter

Once your sauce has heated up, stir through your gnocchi and serve with some fresh parsley
